Proso millet veg rice:
Ingredients:
- 1 cup Proso millet grains
- 2 cups water
- 1 tablespoon oil
- 1 small onion, finely chopped
- 1 clove garlic, minced
- 1 cup mixed vegetables (e.g., peas, carrots, corn)
- 1 teaspoon cumin seeds
- Salt, to taste
- Optional: lemon wedges, chopped fresh cilantro for garnish
Instructions:
1. Rinse and soak Proso millet grains for 6 hrs, Drain and set aside.
2. Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle.
3. Add chopped onion and sauté until translucent.
4. Add minced garlic and sauté for another minute.
5. Add mixed vegetables, salt, and 2 cups water. Bring to a boil.
6. Add soaked and drained Proso millet grains to the pan. Stir well.
7. Reduce heat to low, cover, and simmer for 20-25 minutes or until the grains are cooked and fluffy.
8. Turn off heat and let it rest for 5 minutes.
9. Fluff the Proso millet veg rice with a fork and garnish with lemon wedges and chopped cilantro, if desired.
10. Serve hot and enjoy!
